Scope of Application:
This standard applies to the food nutrition enhancer galacto-oligosaccharides (GOS), which are produced from lactose as the raw material. The process involves the catalytic hydrolysis of the galactosidic bond in lactose into galactose and glucose using β-galactosidase produced by Bacillus sp. ATCC 31382 or Aspergillus oryzae. Simultaneously, the hydrolyzed galactosides are transferred to lactose molecules through the transgalactosylation action of β-galactosidase.
