本标准规定了食品中反式脂肪酸及异构体的气相色谱测定方法。
本标准适用于动植物油脂、氢化植物油、精炼植物油脂及煎炸油和含动植物油脂、氢化植物油、精炼植物油脂及煎炸油食品中反式脂肪酸的测定。
本标准不适用于油脂中游离脂肪酸（FFA）含量大于2%食品样品的测定。
