本标准规定了采用降落数值法对谷物中α-淀粉酶的活性进行测定的方法。
本标准适用于谷物,特别适用于小麦、黑麦及其面粉、杜伦麦及其粗粒粉。本标准中规定了全杜伦麦粗粒粉和全麦粉的粒度。
本标准不适用于低α-淀粉酶活性的测定,有关方法可参照ISO 7973。
通过将降落数值换算为液化值(LN),可推算生产对降落数值有要求的产品所需的谷物、面粉或粗粒粉的混合物组成。
