Scope of Application:
This standard specifies the methods for determining water activity in food using the Conwell dish diffusion method and the water activity meter diffusion method.
This standard applies to the determination of water activity in prepackaged cereal products, meat products, aquatic products, honey products, potato products, fruit products, vegetable products, milk powder, and solid beverages.
This standard does not apply to frozen foods and foods containing volatile components.
The Conwell dish diffusion method in this standard is applicable to a water activity range of 0.00 to 0.98, and the water activity meter diffusion method is applicable to a range of 0.60 to 0.90.
