本标准规定了蛋白酶制剂的产品分类、要求、试验方法、检验规则和标志、包装、运输、贮存。
本标准适用于以淀粉质(或糖质)为原料，经微生物发酵、提纯制得的蛋白酶制剂的生产、检验和销售。本标准不适用于动植物组织提取的蛋白酶制剂，但本标准的技术要求可以参照使用。
