GB/T 31740的本部分规定了固态速溶茶的产品分类及定义、要求、试验方法、检验规则、标志标签、包装、运输和贮存。
本部分适用于以茶叶或茶鲜叶为原料，经水提（或采用茶鲜叶榨汁）、过滤、浓缩、干燥制成的，可在生产过程中加入食品添加剂、食品加工助剂以及适量食品辅料（如麦芽糊精）的固态速溶绿茶和固态速溶红茶产品。
