本标准规定了粮食、油料脂肪酸值测定的术语和定义、原理、试剂与材料、仪器和设备、操作步骤、结果计算及表示、精密度。
本标准的苯提取法适用于小麦粉等粮食脂肪酸值的测定；石油醚提取法适用于大豆、花生、油菜籽、核桃、芝麻、葵花籽、玉米胚芽脂肪酸值的测定。
本标准不适用于其他油料脂肪酸值的测定。
